"Dandelion" Salad with Smoked Salmon
My family's favorite salad for the last 10 years. This is quite literally the dish that won over my future husband. The first time he came to visit, this is the salad I made. There were plenty of other dishes on the table, but this one made a lasting impression on him. Ever since, I've made it for every family celebration — no gathering is complete without it. We recently marked another anniversary, and of course it was on the table again. The best part is that no one has grown tired of it.
Cooking method

Step 1:
Gather your ingredients.

Step 2:
Cut the salmon into small cubes.

Step 3:
Grate the cheese.

Step 4:
Boil the potatoes in their skins until tender, then cool and peel them. Grate the potatoes on the medium side of a box grater.

Step 5:
Hard-boil the eggs, then peel them. Separate the yolks from the whites and grate each on the medium side of a box grater.

Step 6:
Peel and grate the apple. Sprinkle it with a little lemon juice so it doesn't brown.

Step 7:
Spread a layer of potato on a platter, shaping it into an even circle. Coat it with mayonnaise.

Step 8:
Add a layer of salmon on top. I never spread mayonnaise on this layer, since the fish is rich enough on its own.

Step 9:
Layer the egg whites on top and coat with mayonnaise. Spread the grated apple over that and coat with mayonnaise again.

Step 10:
Next, a layer of cheese with a little mayonnaise on top.

Step 11:
Sprinkle the grated egg yolks over the whole top. You end up with a lovely salad that looks like a springtime dandelion.

Step 12:
To play up the resemblance even more, ring the edge of the salad with parsley.
