Plum Adjika with Bell Pepper

    1. Wash the plums and cut them in half. Remove the pits from the centers. The weight given is for the already-pitted fruit. 2. Seed the bell and hot peppers. Peel the garlic cloves. 3. Grind all the washed and prepped ingredients in a meat grinder. Transfer to a pot and cook for 30 minutes, stirring occasionally. 4. Rinse the herbs well under running water — you can soak them in warm water for 5 minutes first. 5. Add the salt, spices, sugar, tomato paste, and finely chopped herbs, then cook for another 15–20 minutes. 6. Meanwhile, sterilize the jars. Ladle the still-hot adjika into the jars and seal with the lids. Turn the jars upside down, wrap them in a blanket, and leave them to cool.
