Broccoli Purée with Mushrooms

    1. Wash the mushrooms well and cut them into pieces. Put them in a skillet and sauté in vegetable oil until golden. 2. Boil the broccoli and drain off the excess water. 3. Add the sautéed mushrooms to the pot of broccoli and season with salt to taste. Add pepper if you like. Blend into an airy purée and stir in the cream. 4. Spoon onto plates and garnish with croutons and mushrooms if desired.
