Step 1:
Easter is prepared in two stages (days). We start by heating the milk, pre-rinse the pan with cold water. While the milk is heating, beat the sour cream with eggs. Slowly pour sour cream into the milk brought to a boil, stirring continuously. We reduce the fire to a minimum, it is better not to go far from the stove. Boil the mixture, stirring. The time depends on the quality of the source products.
Step 2:
If you follow closely, after a couple of minutes you can notice the formation of clots, after 10 minutes the whole mass will curdle. The main thing is not to digest, otherwise Easter will resemble semolina porridge, I just try it periodically. As soon as the desired condition is obtained, turn off the gas, leave it to cool for 1 hour. Then, with the help of a colander covered with gauze, we throw off the mass, the serum can simply be drained, or stored for future use.
Step 3:
The first stage is completed by hanging gauze with cottage cheese for draining (overnight). The next day, we put butter, granulated sugar, vanilla in the cottage cheese and mix everything thoroughly. We add raisins at the last moment. We line the pasochnitsa with gauze and put Easter there. It is not necessary to put the load on top, since there is practically no moisture. Everything is ready, we put it in the refrigerator and wait for the holiday.
