Buckwheat Noodles with Rabbit, Green Peas, and Ginger

  • Drop the noodles into boiling water and cook until tender. Sauté an onion until golden, then add the ground ginger. Cut the rabbit fillet into pieces and add it to the onion. Next add the green peas, but don't overcook them or they'll turn to mush. Add the noodles (rinsed under cold water) and 3 tablespoons of soy sauce, and stir-fry until the soy sauce cooks off. Plate it up and top with a fried egg—that's how they serve this dish in cafés. ;)
