Farfalle with Chicken, Pine Nuts, and Pesto

    1. Boil the chicken breast and let it cool a bit. Cut it into medium pieces. 2. Put the pine nuts in a dry skillet and toast until golden. 3. Grate the hard cheese on the large holes of a box grater. 4. Peel and finely chop the garlic. 5. Make the pesto: put the cilantro, parsley, basil, grated cheese, and chopped garlic in a blender. Add the olive oil, salt, pepper, and toasted pine nuts. Blend everything together. 6. Cook the farfalle in salted water (or any pasta you like) according to the package directions. Drain, reserving some of the cooking water in a bowl—don't throw it out. 7. Add the chicken pieces to the pasta along with the pesto and a splash of the reserved cooking water. Toss to combine. 8. Divide the pasta among plates, drizzle with olive oil, and garnish with fresh herbs. Enjoy!
