Tangerine Jam with Vanilla and Cinnamon

A fragrant, festive, delicious, gorgeous jam! I really love cooking in creative ways and giving homemade culinary gifts to friends and family for New Year's and Christmas — it's a tradition of mine! Every year I dream up something new to delight them, and this year I decided to make my gifts ahead of time and landed on tangerine jam — a lovely, unexpected treat for the winter season.

  • Wash and peel the tangerines, removing the white pith. Break each one into segments and cut them into small pieces. Grate the zest, then put it and the tangerine pieces into a deep, heavy-bottomed pot. Add 1 cup of water, cover, and set over the heat. Cook for 40 minutes over low heat. After 30 minutes of cooking, add sugar, vanilla, and cinnamon to taste, keep it on the heat for another 10 minutes, then let the mixture cool. Blend the cooled mixture to a purée — you can leave some of it chunky, which looks really pretty. Bring it back to a boil and cook 2–3 minutes more, then ladle the jam into jars and seal with lids. Cool, wrap it up nicely, and decorate with dried flowers or however you like. That's it — ready to give as a gift!
