Buckwheat-and-Vegetable Dumplings

You've never had dumplings quite like these — it's time to give them a try! For a lot of people this is a fresh, surprisingly good take on varenyky (Ukrainian filled dumplings). Once they've cooled, reheat them in a skillet, fry up a little onion alongside, and finish with a dollop of sour cream, a splash of soy mayo, some fragrant oil, and fresh herbs. It's a little unusual, but genuinely tasty, and a nice way to shake up a meatless menu. You can also just boil them and drop them into vegetable soups like little "pies." I highly recommend these dumplings.

Cooking method

    For varenyky I like a soft dough made with vegetable oil, salt, and a drop of honey or sugar. Once in a while I make a hot-water dough, but not often.

    Chop the carrot and onion.

    To make the dough, sift the flour. In a measuring cup, stir together the salt, sugar (or honey), water, and vegetable oil, then pour it into a bowl and knead. Work in a little more flour as needed so the dough comes out firm and elastic, but not stiff.

    While the dough rests, cook the buckwheat. Sauté the onion and carrot and season with salt.

    Stir everything together.

    Roll out the dough.

    Spoon on the buckwheat-and-vegetable filling.
