- Boil the beef and cut the bell peppers into thin strips. Peel the orange, break it into segments, and cut them into pieces, carefully removing any seeds as you go. Cut the cooked meat into small cubes, and shred the raw carrot into fine "noodles" using a julienne peeler (the kind used for Korean-style carrots). Now build the salad in layers: first the meat, then a thin drizzle of soy sauce; then the orange and a layer of chili sauce. Next comes the carrot with more soy sauce, then the red bell pepper topped with chili sauce, and finally the yellow bell pepper brushed with soy sauce. Scatter chopped cilantro over the top and refrigerate for 12 hours. The salad is ready to serve—garnish it with grated cheese, shredded cabbage, and fresh cucumber rounds. As always, it's that classic Chinese pairing of meat and citrus, and as always, the flavor is excellent.
