  • First, wash the celery root and peel the onion. Grate the celery on a coarse grater, chop the onion, put both in a skillet, and sauté lightly in the butter. Stir in the flour, mix well, and thin the mixture with part of the meat broth. Simmer for about 10 minutes, then remove from the heat. Next, stir together the sour cream and raw egg yolk, then thin with the remaining broth (it should be cold). Add the celery-and-onion mixture you prepared earlier, crumble the cheese over the top, and season with salt and lemon juice.
