Fried Zucchini Bites with Cheese and Garlic

An original cold vegetable appetizer made with zucchini. Zucchini with cheese makes a great snack for dinner or a party spread. Nobody turns down these little appetizer stacks — they look downright irresistible!

    Gather your ingredients.

    Wash the zucchini, peel it, trim off the ends, and cut it into thin rounds. If the zucchini is young, you can leave the skin on.

    Fry the zucchini rounds in a preheated skillet with a little vegetable oil until golden on the first side. Cook over medium heat.

    Flip them and fry the other side until done and tender. This is how they should look.

    Grate the cheese on the fine holes of a box grater.

    Peel the garlic and press it, or grate it fine or chop it with a knife.

    Wash and chop the parsley. If parsley isn't your thing, dill works just as well. Combine the garlic, cheese, and herbs in a deep bowl.

    Stir in the mayonnaise and mix well. The zucchini topping is ready.

    Lay the zucchini rounds out on a flat plate in a single layer.

    Top each fried zucchini round with a little of the cheese mixture. At this point the dish is ready, but you can take it further and stack the rounds three high, spreading the topping between the first and second layers and leaving the third plain. I made these little towers — they came out pretty and eye-catching.

    For serving, you can set the zucchini on a bed of lettuce for extra flair. Now you know how to make fried zucchini bites with cheese and garlic. Enjoy!

  • Making zucchini with cheese this way won't take much time, and you end up with a really satisfying appetizer. Zucchini with cheese is one of my favorite dishes, so I really recommend giving it a try — especially now that zucchini is back in stores and summer is on the way, when you can make this delicious appetizer any day and enjoy its flavor and the lovely aroma the garlic brings. Easy to make and original-looking, these little zucchini "appetizer cakes" are a lovely addition to any meal. I named them that because that's exactly what they look like!
