Fried Potatoes with Egg

This dish is so simple and fast that even a child could pull it off. And you can dress fried potatoes up with just about anything: meat, mushrooms, spices, or eggs. Fried potatoes with egg can be a meal on their own — tasty and filling thanks to the mix of carbs and protein — or you can serve them with a slice of sausage or meat, pickled or fresh vegetables, and bread.

    Gather your ingredients — they're simple, affordable, and always on hand in any kitchen. Wash, peel, and cut the potatoes into sticks or cubes, whichever you prefer.

    It's best to rinse the cut potatoes again to wash off excess starch, then drain them in a colander so the water runs off and the potatoes dry out. For frying, use a waxy (non-starchy) variety so they don't turn to mush as they cook.

    Pour vegetable oil into a skillet and heat it up. Add the potatoes to the hot oil, lower the heat to medium, and fry for about 20 minutes, stirring now and then. Don't stir too often, or the potatoes may fall apart. If you'd like softer potatoes, fry them covered and only remove the lid at the end to let them brown.

    For golden, crispy fried potatoes, fry them uncovered the whole time. Add salt and spices to the potatoes; if you like, use a ready-made potato seasoning — it usually includes turmeric, which gives the potatoes a nice golden color. Stir gently and fry for another 5 minutes.

    Meanwhile, crack the eggs into a bowl and beat them with a fork until the yolks and whites are blended. Pour the beaten egg over all the potatoes in the skillet. You can also just crack the eggs straight into the pan and stir quickly and gently, or leave them whole — however you like.

    Cover the skillet and turn the heat to low. Fry the potatoes and eggs for about 10 minutes. Take off the lid and let the dish dry out a bit. Turn off the heat and serve. Enjoy!
