Fried Potato Hand Pies (No Yeast)
Crispy, golden hand pies made with kefir — give them a try! I make these as a side for soup or broth, but they're just as good on their own: soft, fluffy, and really satisfying.

- Sift the flour. 2. Add the salt, sugar, and baking soda to the flour and mix well. 3. Pour in the kefir and vegetable oil, crack in the eggs, and knead into a dough. It should come together soft and supple, and shouldn't stick to your hands. 4. Shape the dough into a ball, place it in a bowl, cover with a towel, and let it rest for 30 minutes. Meanwhile, make the filling: 5. Wash and peel the potatoes, and peel the onion. 6. Boil the potatoes in salted water until tender, about 20 minutes. 7. Melt the butter in a skillet, add the onion, and cook until golden. 8. Drain the potatoes and mash them. 9. Stir in the buttery onion, then season with salt and pepper and mix well. The filling and dough are both ready — time to shape the pies: 10. Divide the dough into 20–24 pieces and roll each into a ball. 11. Flatten each ball into a round, place a spoonful of filling in the center, and pinch the edges closed to form a pie. 12. Heat the vegetable oil in a skillet and fry the pies on both sides until golden brown. Serve hot alongside soup or broth, or on their own with a glass of milk or plain yogurt. Enjoy!
