Soft Fried Cheese in Breadcrumbs
An amazing combo of crispy crust and gooey melted cheese. It's a rich dish, but so fragrant and delicious! One tip: fried cheese pairs beautifully with berry sauces — lingonberry, for example. Serve it hot, no exceptions! Fried cheese is very popular in Europe. Brie with its white rind is the classic choice, but I've made it with firmer local cheeses too, and it's every bit as good.

Cooking method
- Beat a couple of eggs in a bowl. Set out the flour in one dish and the breadcrumbs separately in another. 2. Cut the cheese into cubes (about 1/2 inch / 1 cm). 3. Heat a skillet with plenty of oil. 4. Dip each cheese cube first into the egg, then the flour, then back into the egg, and finally into the breadcrumbs. Then place the pieces in the hot skillet. This double breading keeps the cheese from oozing out in the pan. 5. Fry on both sides until golden, then set on a paper-towel-lined plate. Once the excess oil has drained off, arrange on a platter with the lettuce. Enjoy!
