Fried Haddock
A wonderful fish — juicy, with a crisp golden crust. A fresh fish shop opened not far from my house, and of course I headed straight over to pick something up. I bought haddock and made this fried haddock, and now I'll walk you through the recipe.

Cooking method
- How do you make fried haddock? Start by cleaning, gutting, and rinsing the fish well, then patting it dry. Cut it into portions and season with salt and pepper to taste. Now dredge each piece in sifted flour or breadcrumbs. Heat a skillet with oil over medium heat and fry the haddock on both sides until golden. You can cook it covered or uncovered. Once all the fish is done, arrange it on a platter lined with lettuce (or napa cabbage) and top with lemon slices. And there's your dish. Serve it hot with potatoes. Enjoy — for you and your loved ones!
- How do you fillet a whole fish? Remove the tail, head, and fins. Cut along the back down to the backbone. Turn the fish on its side and, with a sharp knife, slice the flesh away from the backbone. Turn it over and cut the fillet from the other side. Clean the inside, removing the black membrane — it's bitter and will spoil the flavor. Rinse and be sure to dry well.
- Important! The wrong pan can ruin even the best recipe. Choosing the right skillet for the job makes all the difference.
- Oils are only healthy up to a certain temperature — the smoke point — beyond which they start to burn and form toxic compounds, including carcinogens. Choosing the right frying temperature and the best oil (and which to avoid entirely) makes a real difference.
