Fried Jam

Discover a one-of-a-kind way to make jam! Fried blackberry jam is an unusually delicious treat — enjoy it alongside a cup of tea, spooned over pancakes or fritters, or as a filling for baking. For this jam, the berries should be dry and unbruised; as they fry, they caramelize and stay whole, keeping their gorgeous, appetizing look. This amount of ingredients makes one pint (half-liter) jar of jam.

  • Wash the blackberries, spread them on a paper towel, and let them dry. The berries should be as dry as possible.
  • Put the blackberries in a skillet, sprinkle the sugar over them, and set over very low heat so the berries release their juice. Stir very gently as they cook so you don't break up the blackberries.
  • Once the berries have released their juice, turn the heat up to high and fry for 10 minutes, then transfer the jam to a pre-sterilized jar and seal it with a lid.
  • Turn the jar upside down and leave it to cool completely for a day, then move it to a permanent storage spot in a cellar or pantry.
  • Enjoy your jam!
