Step 1:
Prepare all the necessary products. Of course, such a snack should be prepared in early autumn, when there are many small elastic eggplants grown here on sale. The skin of such fruits should be matte, not glossy. They should also be elastic to the touch and small in size. Vegetable oil can be taken any: both refined and not. If you like aromatic oils, then you can take both fragrant sunflower and olive oil.
Step 2:
Wash the eggplants well, preferably using a special brush and vegetable detergent. Cut lengthwise into thin plates about 3 mm thick. I like thin slices of eggplant - they are more crispy when fried.
Step 3:
Put the sliced eggplants in a deep bowl, add salt to them.
Step 4:
Put a lid or plate on top and some kind of cargo. I put a three-liter jar of cucumbers.
Step 5:
Leave the eggplants under load for 6 hours, or overnight. Look at how much fluid they've released. Thanks to this procedure, we will remove the bitterness from the eggplant.
Step 6:
Prepare the jars in which you will close the eggplants. Wash the jars well and sterilize them. You can do it in the microwave or in the oven. I put a spoon in each jar so that it does not burst and pour boiling water. I leave it for 5 minutes, then drain the water. It is enough to boil the lids for about 5 minutes.
Step 7:
Drain the liquid that the eggplants have isolated. Dry them with paper towels. Heat the oil in a frying pan and fry the eggplant slices in parts for 2-3 minutes on each side. Put the fried eggplants immediately into a sterilized jar, tamping tightly.
Step 8:
Fill the jar with fried eggplant. Put 1-2 cloves of garlic on top, cut in half. If the oil does not reach the hangers of the jar, boil the vegetable oil and add it to the jar. I immediately close the jar with screw caps, but you can also roll it up with a typewriter. Sterilization is not required. I store such a blank in a cool place, preferably in the basement or in the refrigerator.
Step 9:
If you do not have the opportunity to store cans in the refrigerator, then add a teaspoon of 9% vinegar directly into the jar and then roll it up. Now store it safely in an apartment. Open such a jar in winter - just lick your fingers! Bon appetit!
