- Halloumi is a wonderfully delicious cheese from Cypriot cuisine, widely known across Europe and a favorite in Greek cooking. It's made from a blend of sheep's and goat's milk, and sometimes contains cow's milk too. Its texture is similar to mozzarella, with a lightly salted flavor. What makes this cheese special is that, thanks to its higher melting point compared to other cheeses, it can be fried to a beautiful, appetizing deep-golden crust. Fried halloumi is used as a topping in all kinds of salads, and can also be served on its own with fried vegetables. It pairs well with slices of smoked lamb or pork.
- How do you fry the cheese?
- Prepare the ingredients.
- Cut the halloumi into slices no more than ½ inch (1 cm) thick. Then blot the pieces dry with paper towels. Lay the cheese slices on a plate and coat both sides thoroughly with olive oil.
- Heat a nonstick skillet over high heat.
- Fry the cheese in the hot skillet over high heat until each slice has a golden-brown crust — about 1 minute on the first side and 1–2 minutes on the other.
- Put the fried halloumi on a plate. Cherry tomatoes, mint leaves, and freshly ground black pepper make a great garnish. This garnish beautifully sets off the flavor of the fried cheese, and mint has a natural antibacterial property that helps the cooked halloumi keep a little longer.
- As it cooks, the cheese should soften but not weep liquid. You can poke it with a fork to check the texture.
- Try to eat the cheese the same day you cook it, rather than saving it for later — fried halloumi becomes quite firm once it cools.
