- Wash the eggplant, cut it into slices, put it in a pot, salt it, stir, and let it sit for 10 minutes.
- Peel the onion, cut it into half-rings, and fry it in vegetable oil for 2–3 minutes; then add the eggplant to the onion and fry for 10 minutes.
- Pour the balsamic vinegar and soy sauce over the eggplant, season lightly with salt and pepper to taste, and cook for another couple of minutes.
- Serve warm — it's very tasty with a sour cream and garlic sauce.
