Beer-Battered Fried Calamari Rings
A special appetizer for lovers of fine food and seafood. One year for my husband's birthday I made a really delicious appetizer — battered squid rings. I've made this dish now and then ever since, both for my family and for guests. If you'd like to try it, just follow the recipe below.

Cooking method
- Start by taking your thawed squid, rinsing it well, and patting it dry. Cut the squid into rings about ¾ inch (1.5–2 cm) thick. Drop them into water and cook for about 2 minutes until done. Now make the batter for frying the rings. Beat the egg whites into stiff peaks. In a separate bowl, whisk the egg yolks with the sifted flour and warm beer, salt the mixture, and stir. Then fold in the beaten egg whites and mix everything well. Dip the prepared squid rings in the batter and fry them in a skillet or deep fryer in plenty of oil. Fry them just lightly, so the batter doesn't turn out too hard. Then transfer the rings to a baking sheet and put them in an oven preheated to 350°F (180°C) for about 5–7 minutes.
