Fried Young Zucchini with Garlic-Mayo Sauce

    Gather your ingredients. This dish is best made with tender young zucchini that have thin skin and no developed seed core yet. But if all you have are mature zucchini, that's no reason to skip it — just peel them and cut the flesh into rounds. Wash the zucchini and slice them into thin rounds.

    If you'd like the dish more substantial, you can use an egg-and-flour batter or simply dredge the rounds in flour. Keep in mind this makes it heartier but also richer: the flour soaks up more of the frying oil — but it tastes better, and the zucchini rounds get a crisp crust. Put some wheat flour on a plate and dredge the zucchini rounds on both sides.

    Pour vegetable oil into a skillet and heat it (for a lighter dish you can use olive oil instead). Lay the zucchini rounds in the hot oil. Season with salt and pepper to taste. Fry over medium heat until golden on one side — 2 to 3 minutes is usually enough, depending on how thick the rounds are.

    Once they're golden, flip them over and fry the second side until golden too.

    Transfer the zucchini rounds to a paper towel to blot off excess oil, then move them to a serving plate. While the zucchini fry, peel a few garlic cloves and press them or grate them fine.

    Scatter the minced garlic over the hot fried zucchini. A garlic-mayo sauce made from mayonnaise with garlic and fresh herbs is perfect alongside — though of course it adds to the richness.
