- For the filling you'll need red beans. Rinse them thoroughly, cover with cold water, and ideally let them soak overnight. The next day, before cooking, rinse them well again, cover with fresh cold water, and simmer until soft — this usually takes about an hour. Salt them to taste right at the end of cooking. Drain the well-cooked beans in a colander to get rid of the excess liquid. Peel and wash the vegetables. Chop the onion and fry it in any oil until soft and golden. Grate the carrot on the coarse side of a grater, add it to the onion, and fry the vegetables for about ten minutes until soft. Mash the beans with a masher, or run them through a meat grinder — your choice. Add the sautéed vegetables. Adjust the filling for salt, and season with ground black pepper and any spices you like. For extra flavor you can stir in a little softened butter. Mix the filling thoroughly. The dough can be made with either water or milk — it won't change the taste of the pies. Dissolve the sugar and yeast in the warm milk or water and let the mixture sit for ten minutes. Then add the salt and 4 tablespoons of vegetable oil and stir until the salt dissolves. Add the flour and knead into a soft, non-sticky dough. Cover the bowl and set it in a warm place for an hour to an hour and a half; the dough will double in size. Knead the risen dough for about five minutes on a floured surface and divide it into equal balls. Shape each ball, by hand or with a rolling pin, into a round about 1/4 inch (0.5 cm) thick. Put filling in the center of each round and form neat pies. Fry the pies in well-heated vegetable oil, browning them on all sides to a beautiful golden color. Enjoy!
