Posikunchiki — Ural Fried Meat Hand Pies

You'll fall for these Ural hand pies at first bite — the flavor is unforgettable! Their name always gets a smile. Why "posikunchiki"? Because they're so juicy inside that they squirt when you bite in. The other thing that sets them apart is the size: a posikunchik is just two bites — about the size of a pierogi, but with the flavor of a chebureki. That about sums up these little Ural pies. If you're on a diet, I wouldn't recommend making them, or you'll fall right off it. And this delicious little thing is ridiculously simple to make: dough, filling, shape, fry.

Cooking method

  1. Step 1:

    Step 1

    The ingredients.

  2. Step 2:

    Step 2

Make the dough. Combine the flour, eggs, sour cream, and water, and add salt.

  3. Step 3:

    Step 3

    Knead the dough.

  4. Step 4:

    Step 4

Make the filling. Mix the ground meat with the grated or blended onion, the milk, salt, and pepper until smooth.

  5. Step 5:

    Step 5

Roll the dough into ropes and cut them into pieces.

  6. Step 6:

    Step 6

Dust the counter with flour and roll each piece into a round — not too thin, so the juices from the filling don't leak out while frying.

  7. Step 7:

    Step 7

    Add the filling.

  8. Step 8:

    Step 8

Pinch the edges shut firmly, like a pierogi.

  9. Step 9:

    Step 9

Then crimp the edges into a rope pattern — the signature look of Ural pies.

  10. Step 10:

    Step 10

Heat a skillet with vegetable oil and fry the pies on both sides over low heat.

  11. Step 11:

    Step 11

Turn them carefully so you don't pierce a pie — otherwise the juices leak out and the hot oil spatters.

  12. Step 12:

    Step 12

Serve the pies hot with a mustard-vinegar-salt dip, a kefir-garlic sauce, or a bowl of broth. Enjoy!
