Fried Herring in Flour with Onions

A really tasty, no-fuss fish dish — perfect for herring lovers. I love fried herring so much I'd make it all the time if it weren't for the smell (the range hood barely keeps up). If you have a place with a yard or a summer cottage, you can even fry it outside.

  • Fried herring is a wonderfully tasty dish! You'll just have to put up with the strong "aroma" that a lot of fish gives off while frying. It's great both hot and chilled, and there's no need to overcomplicate things — the more natural the result, the better it tastes and the better it is for you. Start by rinsing the fish well and cleaning it: remove the guts and cut off the head, tail, and fins. Cut it into serving-size pieces (or fry the whole fish if you prefer). Season the pieces with salt and let them sit for a few minutes to take up the salt. Dredge the fish in flour. Heat some oil in a skillet and fry the pieces, scattering coarsely chopped onion over them and turning as they cook. Transfer to a platter and serve with a side — potatoes in any form are great — or with fresh vegetables and herbs, finishing with a squeeze of lemon.
