Fried Sweet Yeast Rolls (Kalachiki)

  • Pour the milk into a saucepan and add the water. Warm them together to about 95–105°F (35–40°C), then stir in the yeast and sugar. Mix well and let the mixture sit for 10–15 minutes, until the yeast wakes up and the surface gets foamy. Add the softened butter to the yeast mixture, crack in the eggs, add the salt, and sprinkle in the vanillin. Beat with a mixer, then start working in the flour a little at a time — you may need a bit more depending on the brand. Knead the dough until it's smooth and elastic, neither too stiff nor too soft. Shape the dough into a ball, set it in the bottom of a bowl, cover with a towel, and leave it in a warm spot for about an hour and a half. By then the dough should have at least doubled, which means it's ready for the next step. Roll it out to about 1/2 inch (1 cm) thick and cut out rounds — whatever size you like. Cut out the center of each round to give the rolls their classic ring shape. Set the rolls on a floured surface and let them rest for 20 minutes, until doubled in size (this can take longer in a cool kitchen — the warmer the room, the faster they rise). Heat the vegetable oil in a heavy-bottomed skillet until hot and fry the rolls until golden on both sides. Transfer the fried rolls to paper towels to soak up the excess oil. Dust the finished rolls with powdered sugar and serve with tea. Happy tea time!
