  • A couple of months ago it was my little cousin's birthday, and being the family's resident cook, I volunteered to help her mom put together the party spread for the kids. A children's table is a whole different challenge from a grown-up one: the food has to taste great AND look fun for the little ones. That's why I chose one of my favorites — hedgehog salad — and that's the recipe I'll share now. Start by rinsing the mushrooms and chopping them small, then fry them in oil in a skillet. Finely chop the herbs. Slice the green olives into rings and cut the black olives into quarters. Finely chop the onion and pour boiling water over it to take off the harsh bite. Now it's time to build the salad. On a platter, shape it like a hedgehog (a teardrop) and layer the ingredients in this order: potato grated on the medium side of a grater, then onion, herbs, and a coat of mayonnaise. Next add the grated egg yolk and the finely chopped pickles, and another layer of mayonnaise. Then the mushrooms, more mayonnaise, the green olives, the grated egg white, and one more good coat of mayonnaise. Now for the fun part: use the black olives to cover the hedgehog's body with "quills," and add eyes and a nose to its little face. And there's our whimsical hedgehog salad with fried mushrooms — done! I'm sure your kids will love it!
