Lazy Cabbage Rolls with Rice and Cabbage in a Pot

Delicious lazy cabbage rolls in a tomato–sour cream sauce. They're wonderful — though not quite as "lazy" as the name suggests. To help them hold their shape while they braise, you need to brown them first. This recipe skips the meat grinder: use store-bought ground meat and just finely chop the cabbage.

Cooking method

    For the lazy cabbage rolls, gather the following: ground meat (I use a mix of pork and chicken), onion, carrot, white cabbage, rice, an egg, salt and spices, plus flour for dredging, vegetable oil for frying, and sour cream and tomato sauce for the braising liquid. Measure everything out from the ingredient list.

    Rinse the rice, cover with 2 cups of water, and cook until done.

    While the rice cooks, finely chop the onion.

    Grate the carrot on the coarse side of a box grater.

    Add the onion and carrot to a skillet with 2 tablespoons of vegetable oil, along with half a teaspoon each of salt and spices.

    Sauté the onion and carrot over low heat for 15 minutes.

    Stir the sautéed onion and carrot into the cooked rice and let it cool slightly.

    Next, cut the cabbage into small dice.

    Add the chopped cabbage to a skillet with 1 tablespoon of vegetable oil, plus ½ teaspoon each of salt and spices.

    Sauté the cabbage over low heat for 10 minutes, then let it cool a little as well.

    In a bowl, combine the ground meat with the sautéed onion, carrot, and cabbage, and add another half teaspoon each of salt and spices.

    Add the egg to the meat mixture and knead it thoroughly by hand.

    Shape the meat-and-vegetable mixture into oblong rolls and dredge them generously in flour.

    Place the floured rolls in a skillet with hot vegetable oil and quickly brown them on all sides over high heat.

    Transfer the browned rolls to a pot or Dutch oven.

    Pour the mixture of tomato sauce and sour cream over the rolls.

    Bring the rolls up to a boil over high heat, then reduce to low and cover the pot with a lid.

    Simmer the lazy cabbage rolls over low heat for 30 minutes.
