Step-by-step cooking

Cooking time: 1 h 15 min
  1. Step 1:

    Step 1.

How to make juicy chops? Which part of the carcass is better to use for this? Ideal for cooking loin, it is not too greasy and does not contain streaks. Prepare all the other ingredients as well.

  2. Step 2:

    Step 2.

Rinse a piece of pork under running water, dry with napkins and cut into pieces about one centimeter thick.

  3. Step 3:

    Step 3.

Cover a piece of loin with a cellophane bag and beat it off on both sides. Why is it recommended to cover the meat with a film? This is done so that there are no splashes when beating and your kitchen remains as clean as possible after this procedure.

  4. Step 4:

    Step 4.

Do the same with all the pieces.

  5. Step 5:

    Step 5.

In a small container, mix salt and sugar. In the recipe I used Adyghe salt, it contains a little dry spices, which undoubtedly improves the taste of the finished meat.

  6. Step 6:

    Step 6.

Smear each piece of loin with a mixture of salt and sugar on both sides.

  7. Step 7:

    Step 7.

Transfer the meat to a deep bowl or bowl.

  8. Step 8:

    Step 8.

    Pour milk.

  9. Step 9:

    Step 9.

Lightly remember the loin and leave for about an hour. A couple of times during this time, the pieces will need to be mixed. The chops will absorb the milk, which will make them very tender.

  10. Step 10:

    Step 10.

Wash the egg thoroughly. Drive it into a deep dish and shake it with a fork. Add a pinch of salt and ground pepper (from myself I poured a little dry seasoning for meat). Mix everything again.

  11. Step 11:

    Step 11.

Dip the loin into the egg on both sides.

  12. Step 12:

    Step 12.

    Then roll in flour.

  13. Step 13:

    Step 13.

Heat the vegetable oil in a frying pan. Send the chops to fry on medium heat first on one side (three to four minutes will be enough).

  14. Step 14:

    Step 14.

Then on the other side until ready (also three minutes).

  15. Step 15:

    Step 15.

Sprinkle the chops with herbs if desired.

  16. Step 16:

    Step 16.

    Done! Serve hot!

Serve chops with fresh vegetables or salad, offer pickles and various sauces to them.
Meat goes well with crushed potatoes, boiled rice, buckwheat or pasta.
A hearty and easy-to-prepare dish will please your family and loved ones!

Bon appetit!

Wash the meat, be sure to dry it with a paper towel, otherwise excessive moisture will not let it fry - it will stew.

Be sure to wash the eggs before use, as even the seemingly clean shell may contain harmful bacteria. It is best to use food detergents and a brush.

If you use ready-made spice mixes, be sure to read the composition on the package. Often, salt is already present in such mixtures, take this into account, otherwise you risk over-salting the dish.

Use oil with a high smoking temperature for frying! Any oils are useful only until a certain temperature is reached - the point of smoking, at which the oil begins to burn and toxic substances, including carcinogens, are formed in it.
Unrefined oils, with rare exceptions, have a low smoking point. There are a lot of unfiltered organic particles in them, which quickly begin to burn.
Refined oils are more resistant to heating, and their smoking point is higher. If you are going to cook food in the oven, on a frying pan or grill, make sure that you use oil with a high smoking point. The most common of the oils with a high smoking point: refined varieties of sunflower, olive and grape.
