Hot Open-Faced Skillet Sandwiches

A quick, easy breakfast option! Lots of people love an open-faced sandwich as a light snack or a hearty breakfast. There are countless ways to make them, but hot ones are a favorite for many — tempting, with a crispy cheesy crust, fragrant, and delicious.

    Gather the ingredients from the list. Feel free to swap in whatever you like. In place of the white loaf, you can use sandwich bread. The cheese does need to be a firm type that melts when heated, but any variety works.

    The bread doesn't have to be fresh — day-old bread actually works great and crumbles less as you slice it. Just don't use anything truly stale. Cut the loaf into slices about ½ inch (1 cm) thick.

    Crack the eggs into a bowl and add a pinch of salt and ground black pepper. Whisk (or use a mixer) until smooth and uniform.

    Use whatever sausage you have and like — boiled or semi-smoked, and even wieners work. Cut it into small cubes or strips, whichever you prefer.

    Grate the hard cheese.

    For a vegetable, I used bell pepper — it gives the sandwiches a pleasant flavor. You could use tomato instead, but pick a firm one so it doesn't release juice and turn to mush when diced. Fresh herbs make the snack aromatic, too — I used a mix of fresh parsley, dill, and a sprig of cilantro, but any herbs will do. Wash the herbs and chop them finely with a knife.

    Add the sausage, grated cheese, bell pepper, and herbs to the egg mixture. Stir it all together. The sandwich topping is ready.

    Spread the topping onto each slice of bread.

    Pour vegetable oil into a heavy-bottomed skillet and heat it well (this matters — it lets the topping set right away when the sandwiches go in, so it doesn't stick to the pan). Lay the sandwiches in the pan topping-side down. Fry over medium heat for 5 minutes. Toward the end, you can cover the pan with a lid so the egg mixture cooks all the way through.

    Then flip the sandwiches bread-side down and keep them on the heat for a few more minutes, until crisp. Take them off the pan and serve hot. Enjoy!
