    Gather your ingredients. The bread doesn't have to be fresh — day-old bread that's dried out a little actually works even better, browning up crispier. Use large slices, so a sandwich loaf is ideal. Use medium eggs so they fit nicely inside the bread.

    Cut the bread into slices about 3/4 inch (1.5 cm) thick. Slices that are too thin won't hold the egg, and it'll run out across the pan and spoil the look. Cut the bread neatly and evenly so it sits flush against the pan and the egg white can't leak out underneath as it cooks. Cut a hole in the center of each slice for the egg.

    You can do this with a knife, but it's easier to press out with a glass or a cookie cutter — a shaped cutter makes it even more fun and pretty. Don't toss the cut-out piece of bread; you can toast it in the pan too for a very tasty little crouton.

    Pour vegetable oil into the pan and heat it well over high heat. Add the bread slices and fry until golden on one side.

    Then flip it and let the other side brown. Right away, crack an egg into the hole — carefully, so you don't break the yolk. The pan should be very hot so the egg sets immediately. Season with salt and pepper to taste.

    Cook the egg in the bread for about 2 minutes over medium heat. To finish cooking the egg, cover the pan and keep it over the heat for about 3 more minutes. Take it off the pan and serve.
