Beef Liver Fritters

Healthy, tasty liver fritters for kids and grown-ups alike. As a child, beef liver was the only way I'd eat it — I flat-out refused any other preparation. Now my son is the same way. And since liver is such a great source of iron, I make these fritters all the time.

Cooking method

    Gather your ingredients. To make beef liver fritters, you'll need: beef liver, semolina, an egg, garlic, sour cream, ground black pepper, and salt.

    Rinse the beef liver well and remove any membranes, internal ducts, and blood clots. Pat it dry with a paper towel and cut it into medium pieces.

    Peel the garlic and either press it or mince it finely with a knife.

    Put the liver and garlic in a blender and blend until smooth.

    Add the egg and sour cream to the liver and blend again.

    Transfer the liver mixture to a deep bowl. Stir in the semolina.

    Season with salt and pepper, mix, and let it sit for 20–25 minutes so the semolina can swell.

    Heat the vegetable oil in a skillet. Drop tablespoonfuls of the liver mixture into the hot oil, shaping them into round fritters. Fry on both sides, adding a little more oil as needed.

  • Beef liver is a great addition to a diet at any age. It's rich in iron, which helps raise hemoglobin, supports growth in children, and helps prevent anemia. It's also a good source of B vitamins and other nutrients that support brain function and the nervous system.
