Squid Cutlets

These cutlets taste a lot like classic white-fish patties. I love squid, but I usually just toss it into salads, and a couple of times I've made fried calamari rings in batter. Turns out these cutlets are the best thing you can make with squid.

  1. Step 1:

    How do you make squid cutlets? Gather your ingredients: squid, breadcrumbs, an egg yolk, vegetable oil, ground black pepper, and salt.

    Thaw the squid. If the bodies aren't cleaned, rinse them well and peel off the skin and membranes. Cut the squid into pieces.

    Put the cut squid in a blender and grind it. You can use a meat grinder instead.

    Add the egg yolk, 50 g (about 1/2 cup) of the breadcrumbs, the ground black pepper, and the salt to the squid.

    Grind the mixture once more.

    With wet hands, shape the mixture into small round cutlets. Roll them in the remaining breadcrumbs.

    Heat the vegetable oil in a skillet. Fry the cutlets over medium heat for 3–4 minutes per side, until golden brown.

    Serve the cutlets hot, garnished with fresh herbs. Enjoy!
