Slow Cooker Braised Potatoes with Pork
The tastiest dish made from simple ingredients — perfect for a family lunch or dinner! These slow-cooker braised potatoes with pork turn out incredibly good, almost like they were cooked in an old-fashioned wood-fired oven. It's a great everyday meal, and you can swap in any vegetables or meat you like — the slow cooker does the rest for you!

Step 1:
How do you braise potatoes with pork in a slow cooker? Gather your ingredients. Wash the vegetables and pat them dry with paper towels, and peel the onion. Instead of tomato paste, you can use canned tomatoes in their juice or fresh tomatoes blended until smooth. Feel free to add any dried spices you like — here I used just pepper, salt, and bay leaf.

Step 2:
Rinse the meat well under cold water, then pat it dry with paper towels. Trim off any excess as needed, then cut the meat into medium chunks, about 1 inch (3 cm). Trim away excess fat too.

Set the slow cooker to the sauté setting. Mine is an older model, so I use the bake setting and set it for 20 minutes — go by what your machine offers. Pour the oil into the pot and wait about 3 to 5 minutes for it to heat up, then add the cut-up meat.

Brown the meat with the lid open for about 3 to 5 minutes, turning the pieces so they sear on all sides. This seals the juices inside and keeps the meat tender.

While the meat browns, prep the vegetables. Peel the onion and carrot. Dice the onion and grate the carrot on the coarse side of a box grater.

Once the meat has fully changed color, add the chopped vegetables. Keep cooking, but now with the lid closed.

Meanwhile, wash and peel the potatoes, then cut them into cubes the same size as the meat.

When the sauté cycle finishes, stir the tomato paste into the pot.

Next, add the potatoes. Season with salt and pepper and stir everything together well. Pour hot water over the meat and potatoes — using hot water keeps the cooking going without interruption, since cold water can toughen the meat. Add enough water to almost cover the meat, but not all the way, or the finished stew will come out watery.

Add the bay leaves to the stew. Set the slow cooker to the stew setting — I use 1.5 hours, but go by your own machine. When the program ends, you can leave it on the keep-warm setting so the meat continues to gently braise; it comes out even better that way. Enjoy!
- I really love this dish and have been making it for years. I used to braise potatoes in a Dutch oven in the oven, but now I only use the slow cooker. The meat comes out soft and juicy, and the potatoes are tender and falling apart. You can use any meat for this stew — beef, chicken, or turkey — and season it however you like. A little garlic is a nice addition, and it's lovely sprinkled with fresh herbs when serving.
- To keep the onion fumes from stinging your eyes while you chop, rinse the onion and the knife under cold water. Rubbing the cutting board with a piece of lemon before chopping keeps it from soaking up the onion smell.
- Besides pork, you can use any other meat in this dish. Keep in mind that the cooking time, flavor, and calorie count will change — beef, for example, takes longer than pork, while chicken breast or turkey takes less.
