Yeast Doughnuts with Milk
A delicious, sweet, rich treat for tea time! Most of us know the taste of hot, sweet, airy doughnuts. I remember them from my student days—they were sold near the university, and I treated myself to them more than once. I'd completely forgotten about them, so I decided to spoil my family with a fresh batch.

Step 1:
Gather the ingredients from the list. These doughnuts are not only delicious but also easy on the budget—everything you need is likely already in your kitchen. Put a piece of butter in a deep bowl and melt it in the microwave or over a double boiler.

Pour in the milk. I used whole milk (about 3.2% fat)—the higher the fat content, the richer the doughnuts will be.

Add the sugar and a pinch of salt (to balance the flavor) and stir until the dry ingredients are fully dissolved.

Beat the egg with a fork in a separate bowl, then pour it into the bowl with the rest of the ingredients. Stir again.

Sift the flour and combine it with the dry yeast. I use instant yeast, which can go straight into the flour. You can use fresh (cake) yeast instead, though the process will be a little different. Add the flour and yeast to the bowl of liquid and mix into a dough.

Work in more flour as needed, kneading the dough by hand on a floured board. You should end up with a soft, elastic dough. Leave it in the bowl, covered with plastic wrap, for 40 minutes at room temperature.

Divide the dough into a few pieces and roll each one out into a sheet. Using a drinking glass and a small shot glass, cut out the doughnut rings. Let them rest on the counter for 10 minutes to rise slightly.

Pour vegetable oil into a skillet or saucepan and heat it well. Add the doughnut rings to the hot oil and fry over medium heat until golden brown on both sides.

Each following batch fries faster, so don't wander far from the pan—you don't want the doughnuts to brown too much and pick up a bitter edge. Transfer the doughnuts to a paper towel to drain off the excess oil. Dust with powdered sugar and serve. Enjoy!
