Pan-Fried Egg and Green Onion Hand Pies (Kefir Dough)
Simple, quick, and delicious! Hand pies with a juicy, fragrant green onion and egg filling are a favorite for many. But you don't have to make them with yeast dough — soft, tasty pies come together beautifully from a simple unleavened kefir dough, fried right in the skillet. They're also a great way to use up that half-carton of kefir left in the fridge. Best of all, they take next to no time, which is a real plus for a busy cook.

Step 1:
While the eggs hard-boil, make the dough. Have the dough ingredients out ahead of time so they're at room temperature. Crack one egg into a bowl, add the sugar and salt, and stir together.

Prep the ingredients for the pies, starting with the eggs for the filling. Wash the eggs with soap to keep any germs out of the food. Put them in a saucepan, cover with water, and hard-boil them. Cook no longer than 10 minutes after the water boils, or the yolks will turn an unappealing grayish-blue. Drain off the hot water, cover with cold water, and let them cool for 10 minutes.

Pour in the room-temperature kefir. If you forgot to take it out ahead of time, warm it briefly in the microwave. Stir again.

Sift the flour. Add half of it to the liquid mixture and stir. Add the baking powder — or, if you prefer, baking soda slaked with vinegar. Stir again.

Then add the rest of the flour a little at a time, stirring after each addition. When it gets too hard to stir with a spoon, turn the dough out onto a floured surface and keep kneading. It should be soft and slightly sticky. Roll it into a ball. Don't add too much flour, or the dough will turn hard and stiff. Put it in a bag and let it rest on the counter for half an hour.

Make the filling. Wash the green onions, pat them dry with paper towels, and chop them finely.

Peel the hard-boiled eggs and chop them finely. Combine them with the green onions, add the salt and a couple of tablespoons of sour cream, and mix.

Take the dough out of the bag and divide it into 18 pieces. Roll each one out into a small round on a floured surface.

Put filling in the center and pinch the edges of each pie closed.

Shape all the pies the same way.

Heat the vegetable oil in a skillet. Fry the pies over medium heat on both sides until golden.

Serve the egg and green onion pies with tea, coffee, or cocoa. Enjoy!
