Here's the full method: use fresh or frozen spinach. Rinse fresh spinach and chop it (small leaves don't need cutting), then cook for 5 minutes; for frozen, drop it into boiling water and cook 5 minutes as well. Drain in a colander and let the water run off. Melt the butter, finely chop the onion, and sauté it. Add the flour, stir, and cook briefly. Pour in the cream and add nutmeg, salt, and the spinach. Simmer 10 minutes. Grate the cheese and sprinkle it over the dish 3 minutes before it's done, so it melts. For the toast: beat the eggs with a little salt, heat a skillet with vegetable oil, cut the bread into pieces (any size you like), dip them in the egg, and fry on both sides. Spoon the creamed spinach over the toast. If you'd rather skip the toast, just eat the creamed spinach with bread or serve it as a side alongside mashed potatoes, meat, fish, rice, or pasta. It's also delicious cold.
