Step 1:
How to make chopped turkey cutlets? Prepare the specified ingredients. I took the turkey breast, but fillets from other parts will also do. It is better to take fresh meat, if it is frozen, then defrost it only slightly, slightly frozen meat will be easier to cut with a knife. I use corn starch, but you can take potato or plain flour instead. Eggs are small in size.
Step 2:
Wash the turkey fillet under running water and dry with a paper towel. Cut off the remaining bones (if any). Place the meat on a cutting board and cut into small cubes with a very sharp knife. Alternatively, you can chop the meat in a blender. Put the chopped meat in a deep bowl.
Step 3:
Peel the garlic and pass it through the press. Pre-break the eggs into a separate bowl to check their freshness. In a bowl with chopped turkey meat, add eggs and chopped garlic cloves. Mix everything thoroughly.
Step 4:
Add mayonnaise to the minced meat (it is added to make the cutlets more juicy, you can refuse it or replace it with sour cream), corn starch and salt to taste. Optionally, you can add ground black pepper or any other favorite seasonings. Once again, mix everything very well.
Step 5:
Put the prepared minced meat for chopped cutlets in the refrigerator for 20-30 minutes. During this time, the starch will absorb all the liquid. and it will be easier to put the cutlets in a frying pan.
Step 6:
Heat the frying pan over medium heat, pour vegetable oil on it for frying. Spread the meat mass on the pan with a tablespoon. Cutlets turn out like pancakes, minced meat holds its shape very well and does not spread. Fry the cutlets until golden brown first on one side, then gently turn them over and fry on the other.
Step 7:
Ready-made chopped turkey cutlets are good both hot and chilled. Hot cutlets are suitable for any side dish — pasta, rice, vegetables. In a chilled form, it is good to offer them together with bread, like sandwiches. Such light cutlets are also suitable for children.
