  • An eggless milk cake is anything but bland — in fact, some find it even more pleasant, especially anyone who dislikes the smell of eggs in baking. The ingredients here are so simple that even a kid could make it, and the result is an airy, feather-light cake that isn't weighed down by dense whites and yolks, with a pleasant moistness inside. Best of all, it doesn't take long to put together, so it saves real time and effort. No eggs, no problem! And cinnamon lovers will especially enjoy this one. Here's how: 1. First, pour the milk and cream into a deep bowl, stir well, and add the syrup. In my case, I used the liquid drained from dried-fruit jam. Add the citric acid or lemon juice, whichever you have. 2. Separately, combine the flour, cinnamon, and baking soda. Then turn on the oven. 3. Now add the flour mixture to the wet mixture in small batches, stirring evenly each time until smooth. 4. Pour into a pan, keeping in mind the cake will rise well (about double), and let it stand for about 3 minutes so the leavening starts to work — you'll see it right away. Then put it in the oven. After 30 minutes, the cake is ready. But keep an eye on it, since ovens vary. This recipe is the simplest, yet respectable in both looks and taste.
