- Make the dough with kefir. Pour it into a bowl, stir in the baking soda, and let it sit a couple of minutes so it reacts. Sift the flour into a deep bowl, pour in the kefir-and-soda mixture, and add the salt. Knead a soft, pliable dough, then let it rest for 10 to 15 minutes under a towel. Meanwhile, grate the cheese, stir in finely chopped herbs, taste, and add salt if needed. Divide the dough into 6 equal pieces. Shape each piece into a round by hand, pressing it gently onto a lightly floured surface. Wrap 2 tablespoons of filling in each round and pinch the edges to seal. Then roll it out into a thin sheet. To avoid tearing the dough, shape it by hand first and only then finish with a rolling pin, working gently so it doesn't rip. Cook the khychiny on both sides in a dry, hot skillet, about 3 minutes per side. Brush the finished flatbreads with butter. While they cool, make the sauce: put the yogurt in a serving bowl, press in the garlic, and stir in finely chopped herbs. Serve the flatbreads with the sauce and share them with family. Enjoy!
