Batter-Dipped Meat Patties in a Skillet

An incredibly tasty dish for family lunch or dinner! These batter-dipped patties are hearty, tender, and juicy — kids especially love them. Serve them with mashed potatoes, grains, or pasta. They're just as good on their own, with a sauce, a salad, and so on.

    How do you make batter-dipped meat patties in a skillet? Gather everything on the list. Use any ground meat you like — pork, beef, or a blend of a few meats all work great. For this recipe I used store-bought ground pork.

    Peel the onion and garlic. Rinse the eggs and pat them dry with paper towels.

    Crack one egg into the ground meat and season with salt and pepper to taste. At this point you can also add any favorite spices or seasonings. Mince the onion as finely as you can or grate it on the large holes of a box grater, and do the same with the garlic. If you're grinding your own meat, run the onion and garlic through the grinder along with it.

    Knead the meat mixture thoroughly, then slap it against the bottom of the bowl or the counter a few times to firm it up. Cover it with plastic wrap or a bag and chill in the refrigerator for 1–2 hours.

    Make the batter: crack two eggs into a deep bowl and add the flour and sour cream. Season with salt to taste and whisk until smooth. Keep in mind the exact amount of flour may vary — add it a little at a time. The batter shouldn't be too runny or too thick.

    Take the meat out of the refrigerator, knead it once more, and shape it into small, evenly sized flat patties.

    Dip each patty into the batter, coating it on all sides.

    Heat the vegetable oil in a heavy-bottomed skillet. Fry the patties over medium heat until golden brown.

    Flip the patties, lower the heat a bit, cover, and cook for about 5–7 minutes more, until cooked through.
