Cottage Cheese Kefir Fritters
A hearty, fragrant breakfast — quick, cheap, and delicious. You don't have to add the orange zest, but I love the flavor it gives fritters and cheesecakes, so I put it in. Serve these with sour cream, honey, jam, or any sauce you like.

Gather your ingredients.

Beat the egg with the sugar, vanilla sugar, and salt.

Mash the cottage cheese with a fork. Pour in the egg mixture and stir to combine.

Pour in the kefir, add the orange zest, and mix.

Add the flour sifted together with the baking soda. Stir it all together.

You should end up with a thick, smooth batter.

Fry the fritters in a skillet with a little vegetable oil, browning both sides until golden. I shaped mine by hand, but you can also drop the batter by the spoonful.
