Mashed Potato Flatbreads

A simple, quick snack — and the best way to use up leftover mashed potatoes! These mashed potato flatbreads are a great option for a full breakfast or a fast bite any time of day.   • Take your already-cooled mashed potatoes out of the refrigerator. If you don't have any left from yesterday's dinner, boil some potatoes, mash them, and cool them at least to room temperature. Add the eggs to the mashed potatoes, ideally one at a time. You can finely chop the garlic, but pushing it through a press works better — it distributes more evenly. Add the garlic to the potatoes and season with salt and pepper. Grate the cheese on the fine side of a grater; any variety works, as long as it's firm. Stir it into the potatoes until evenly combined. Start adding the flour in small amounts. For these flatbreads there's no need to sift it — just add it straight from the bag, stirring constantly with a fork until smooth. Knead a fairly stiff potato dough and divide it into equal portions, rolling each into a ball. These are your flatbread portions. This dough is hard to roll out with a rolling pin, so use another method: dust a small plate generously with flour, set a ball of dough in the center, and stretch it out evenly in all directions. The flatbreads come out large and are cooked one at a time, so there's no need to shape several ahead. You can fry potato flatbreads with or without oil — either way they won't burn, so it's up to you. Without oil they're lighter and fit a diet menu. Heat the skillet until very hot (add oil if you like). Fry each flatbread for 3 minutes, then flip it over; that's enough time for the center to cook through. Stack the flatbreads and serve with sour cream or any sauce you like, sprinkled with fresh herbs. Enjoy!
