Homemade quesadias with minced chicken

Quesadias are a popular dish of Mexican cuisine. Such a flatbread can be a delicious snack at any time, especially if you have ready-made tortillas. They are traditionally made from corn flour, but the flour that is sold in our stores does not contain enough gluten, so it is better to take ordinary wheat of the highest or first grade. You can add red chili pepper to the filling for sharpness, if you like sharper dishes. It turns out quesadias are very tasty and satisfying. We serve it with any drink, preferably hot.

    Pour in hot water with a temperature of about 50-60 degrees. We begin to knead the dough in a bowl with a spoon, and then we shift it to a floured table and hang it with our hands to the desired state: the dough should lag well behind the hands and turn out elastic and soft. We make a ball out of it, wrap it in a package and let it lie down for 20 minutes.

    Divide the dough into 4 parts: we will have 4 tortillas. Each part is thinly rolled into a circle. If uneven edges are obtained, then you can put a plate on top of the cake and cut them off. A neat round cake comes out.

    Bake the tortillas in a dry frying pan over medium heat until brown spots appear - about 30-40 seconds on each side. It doesn't take longer to keep them dry. The finished tortillas can be immediately folded in half and put in a bag so that they remain soft.

    Let's do the filling, which can be done while the dough is resting, so we will save time on cooking. Three cheese on a coarse grater. My pepper, remove the stalk with seeds and cut into strips.

    Chop the peeled white onion, my green onion and also finely chop.

    Pour a little vegetable oil into the pan, when it is sufficiently heated, spread the onion, pepper and minced meat. Add salt and spices to taste. Stir and fry on high heat until the minced meat is ready - the minced chicken is cooked quickly, about 10 minutes. Add tomato paste and green onions, mix and turn off the fire after 1 minute. The filling is ready.

    We take one tortilla and spread the cheese on one half with the first layer, the second with minced meat with pepper and the third with cheese again.

    Roll the tortilla in half and fry in a dry frying pan (you can with a textured bottom) on high heat for 2 minutes on each side. The main thing is that the cheese has time to melt. The melted cheese will glue the filling together and it will stick well in the cake. Ready-made quesadillas are divided into 2 parts and served to the table.
