Oven-Grilled Pork Ribs
Fragrant, savory, and beautifully browned — perfect for dinner or a celebration! Pork ribs grilled in the oven are every bit as good as ribs cooked over coals. The recipe is simple and easy, with just a handful of ingredients. The ribs come out juicy, not the least bit dry.

Step 1:
How do you grill pork ribs in the oven? Gather the ingredients. Choose meaty ribs, preferably fresh (chilled). If they're frozen, thaw them the right way: move them from the freezer to the fridge first, and only then to room temperature. The garlic is fresh, but you can use garlic powder instead if you prefer.

Step 2:
Pour the soy sauce into a separate bowl for the marinade. Pay attention to quality — there are a lot of cheap imitations out there, so go for a good, naturally brewed soy sauce even if it costs more. Stir in the utskho-suneli (a Georgian ground blue-fenugreek seasoning).

Step 3:
Mince the garlic and add it to the soy sauce. I usually grate the garlic, but you can chop it with a knife or run it through a press. At this point you can also add any favorite spices or herbs — thyme, rosemary, allspice, paprika. It's up to you.

Rinse the ribs well, pat them dry, and cut between the bones so each rib is separate.

Put the ribs in a deep bowl and pour the marinade over them. I didn't add any salt at all, since soy sauce already has plenty.

Stir and let the meat marinate for at least 20 minutes. This marinade lets the ribs sit for up to 2 days if you like.

Step 7:
Set up the oven rack. Place it over a baking sheet to catch the dripping fat and marinade as the ribs bake. I also recommend pouring some water into the pan so nothing burns or smokes.

Arrange the ribs on the rack with a little space between them.

Put the ribs in an oven preheated to 350°F (180°C) and bake for 40 minutes on convection, then 10 minutes under the broiler.

Serve the ribs hot with vegetable salads and fresh herbs. Enjoy!
- Since everyone's tolerance for salt, sweetness, bitterness, and heat is different, always season to your own taste. When trying a new spice, go easy — some, like chili pepper, are especially easy to overdo.
- If you use a pre-made spice blend, read the label. Many already contain salt, so account for that or you risk over-salting.
