Before rushing into the kitchen to cook porcini mushrooms, it is worth determining what they are. There are several types of these mushrooms. The first, thin ones, were previously conditionally poisonous, and then moved into the category of poisonous and prohibited for use in the USSR. The second, thick ones, can be cooked. But they are also defined as conditionally edible. This means that they must be boiled before being added to any dishes. It is also worth clarifying that in Western countries pigs are inedible mushrooms with toxic properties that have not yet been studied.

A thick, or felt, piglet is a fleshy mushroom with a convex rounded cap up to 15-20 cm in diameter. The center is slightly depressed, and the edges are turned up. The velvety surface has a brown or brown tint to the touch. The flesh itself can be white or yellowish, darkens quickly in the air. The taste of the mushrooms is bitter, there is almost no smell. They are also popularly called pigs, piggies, tweezers, cowsheds. And despite the ban on blanks, they are quite actively consumed in the Russian countryside.
After harvesting, thick pigs must be soaked in cold water with salt and lemon juice. And replace the water three or four times during the day. Then rinse the mushrooms in running water and cook for about five minutes with salt. Then pour out the liquid, do not use it in any case. Put water in the pan again and cook the pigs for half an hour. Drain the water and repeat the procedure again. At the end, wash the mushrooms well and dry them.
In this processed form, felt pork can be used on any dishes, including homemade twists, salads, sauces, soups, stews, casseroles, pies. Pickled and salted mushrooms are considered especially tasty.
In boiled form, the composition of pigs is as follows: 30 kCal, BZHU 3,7; 1,7; 1,1, respectively. These mushrooms contain a lot of telephoric acid and atromentin. The first is a blue pigment, the second is brown, and even with antibiotic properties. Atromentin is a derivative of polypore acid, known for its antitumor properties.
