Step-by-step cooking

Cooking time: 1 h 20 min
  1. Step 1:

    Step 1.

How to make zrazy from minced meat with egg? Prepare all the necessary ingredients. Take minced meat from any meat that you like. If you buy ready-made, take high-quality without additives. But it's better to make the stuffing yourself. I have pork and chicken. Eggs are suitable for C1 or C0, refined oil. Take the greens at your discretion, any available one will do. I have onions and parsley.

  2. Step 2:

    Step 2.

Boil the eggs. How to cook eggs? Wash the eggs with soap, gently lower 3 eggs into a small saucepan and pour cold water. Put one egg aside for now, it will be needed later (step 9). Bring to a boil over high heat, reduce the heat to medium and cook for 10 minutes. Fill the eggs with cold water to make them easier to clean, and cool completely.

  3. Step 3:

    Step 3.

Cut the loaf into slices, pour in milk. I replace milk with water, because I don't like its taste in cutlets. Leave for 5 minutes, then drain the milk and squeeze the loaf well. If there is a lot of liquid left, the minced meat will spread and you will not be able to form a zraza. Chop the soaked loaf with your hand or fork into a homogeneous mush.

  4. Step 4:

    Step 4.

Peel the onion, rinse and cut into small cubes. In this form, it will fry faster.

  5. Step 5:

    Step 5.

Peel the eggs from the shell. Cut into pieces no larger than 1x1 cm.

  6. Step 6:

    Step 6.

Wash the greens under running water, dry them on a towel or napkin. Cut off the hard parts and chop the greens with a knife.

  7. Step 7:

    Step 7.

To fry onions, take a frying pan. Heat it over medium heat, carefully, so as not to get burned, pour a tablespoon of vegetable oil on it and transfer the chopped onion. Fry over medium heat, stirring occasionally, for about 2 minutes. The onion should become softer and begin to turn golden. Cool completely.

  8. Step 8:

    Step 8.

In a deep bowl, mix the chopped eggs, herbs and onions. Add a little salt and mix until smooth. The filling is ready.

  9. Step 9:

    Step 9.

In a deep bowl, in which it is convenient to mix the ingredients, transfer the minced meat, a loaf and break the remaining egg.

  10. Step 10:

    Step 10.

Add salt and knead the minced meat until smooth. The longer the minced meat is kneaded, the easier it will be to work with it later. It took me 10 minutes.

  11. Step 11:

    Step 11.

Proceed to the formation of zraz. From this amount of products, 8 pieces are obtained. I made 6 large ones and steamed 4 smaller ones. Therefore, they fit on my 20x30 cm form. To bake all at once, take the largest baking tray. Lubricate it oil. Take a full palm of minced meat, roll it into a ball and mash it into a cake about 1 cm thick. Put a tablespoon in the center without a slide of filling.

  12. Step 12:

    Step 12.

Gently lifting the edges of the minced meat, seal the filling into the cutlet so that it remains all inside. Place on a baking sheet seam down. Form the remaining zrazy, laying out on a baking sheet. Bake in the oven at 190 degrees for about 40 minutes. The cooking time may vary depending on the capabilities of your oven. Cool the finished zrazy a little and serve it to the table. Enjoy your meal!

Zrazy are meat cutlets with various fillings. They are prepared in Lithuania, Ukraine, Poland, and they are also very common in Belarus.

The taste of zrazy is pleasant cutlets with stuffing. Each time you can get a new taste if you take different minced meat and different fillings. I do not add spices to these zrazy, but if you want, please, the taste will only become brighter from this. But do not forget that if you take a ready-made seasoning mixture, it may contain salt. Keep this in mind - over-salting, you can spoil the taste of the finished dish.

They should be served hot with vegetables of any kind and in any form. Very good zrazy with mashed potatoes.

I added a little more greens to the filling than indicated in the recipe. And at the end I had a few extra spoonfuls of filling left. If you increase the amount of any ingredient in the filling, you need to add less of the other product. Keep this in mind when you prepare zrazy.
