Green Cottage Cheese and Herb Spread

A versatile, stunningly tasty filling for your appetizers. My kids absolutely adore this recipe. It's healthy and light — and on top of all that, versatile. You can spread this paste on bread (ideally dark rye), crackers, tomatoes, fried eggplant, or boiled eggs. It comes together very quickly and easily.

  • We need cottage cheese — ideally not store-bought; it should be full-fat and soft. Put it through a meat grinder with a fine plate. Do the same with the herbs. Dill is a must in this paste; the rest is up to your taste. I use green cilantro, parsley, and mint, for example. And garlic, of course — you can't do without it. Season with salt and pepper. You can bind it with mayonnaise, but if it's for kids, sour cream is better. This spread can even dress up a festive table. They sell edible little puff-pastry cups — fill them with the cottage cheese and arrange them on lettuce leaves on a large platter. You can also slice tomatoes into rounds and spread some on top of those, too. I hope you'll enjoy this recipe.
