Skillet Chicken Brizole
Tender egg-wrapped chicken pancakes with a juicy vegetable filling! You can make these chicken brizole in a skillet any time of day. They come together quickly and turn out really hearty — try them once and you'll want to make them again and again.

Step 1:
How do you make chicken brizole in a skillet? Start by gathering your ingredients. You can make the ground chicken yourself by running chicken breast through a grinder, or just buy it pre-ground.

Put the ground chicken in a roomy bowl and season it with a little salt and spices. Mix well, then throw the meat against the bottom of the bowl a few times so it firms up. If the mixture is very wet, work in a little cornstarch, semolina, or flour.

In a separate bowl, whisk together the eggs, milk, salt, and spices. Beat lightly with a fork or whisk.

Take a small portion of the chicken and roll it out thin between two sheets of oiled plastic wrap.

Pour a ladleful of the egg mixture onto a flat plate.

Lay the rolled-out chicken on top of the egg.

Add a little oil to a hot skillet and, in one quick motion, slide the egg-and-chicken layer in. Fry for 1–2 minutes until golden.

Flip it over and fry the other side over low heat for another 2–3 minutes.

Transfer the finished brizole to a plate and, while it's still hot, fold it in half. Cook the rest the same way.

For the filling, grate the dill pickles and stir them together with the mayonnaise and minced garlic.

Spread the filling down the center of each brizole and serve hot.
