Braised Chicken with Mushrooms and Vegetables

A rich, savory, aromatic dish with an Italian accent! Everything about this recipe just works — the flavors come together beautifully and play off one another. It's wonderful over pasta, polenta, rice, or a scoop of mashed potatoes.

Cooking method

    Sear the chicken in the olive oil until golden brown.

    Meanwhile, slice the mushrooms.

    Chop the onion.

    Dice the bell pepper.

    Take the seared chicken out of the pan and, in the fat left behind, sauté the mushrooms, onion, and pepper.

    Cook until the vegetables are soft.

    Score the garlic cloves with a shallow cross, add them to the pan, and cook for about 1 minute.

    Return the chicken to the pan with the vegetables.

    Pour in the chicken broth.

    Add the tomato juice. (Mine is homemade with pulp, but canned tomatoes in their own juice work great here too, or in a pinch, good tomato paste thinned with water to the right volume.)

    Add the seasonings — ground red pepper to taste and dried basil (or oregano).

    Simmer for 30 minutes.

    Halve the olives (leave them out if they're not your thing) and finely chop the fresh herbs.

    Bring to a boil, stir, turn off the heat, cover, and let the dish rest so the flavors settle.
