Chicken Cutlets with Mushrooms
Tasty, easy, and ready in a hurry — these chicken cutlets with mushrooms come together in about 30 minutes. They're a perfect dish for chicken lovers, and kids adore them too. Serve the cutlets with any side you like — grains, vegetables, pasta, or beans — they pair well with just about everything!

Step 1:
How do you make chicken cutlets with mushrooms? Start by gathering your ingredients. You can grind the chicken yourself in a meat grinder or buy it ready-made. Any mushrooms will work here — I'm using button mushrooms.

Peel, rinse, and chop the onion. Rinse the mushrooms and chop them finely too. Heat a skillet until hot, add a little vegetable oil, and add the onion and mushrooms. Sauté everything together for 5–6 minutes, stirring so the mushrooms don't scorch.

Step 3:
Transfer the ground chicken to a roomy bowl. Add the egg, salt, and a little seasoning — ground pepper and a pinch of paprika work well.

Next, add the sautéed mushrooms and onion along with the breadcrumbs. Why the breadcrumbs? They soak up some of the moisture in the ground chicken, which keeps the cutlets from falling apart as they fry.

Mix everything together until smooth. Slap the meat mixture against the bottom of the bowl a few times to firm it up.

To fry the cutlets, heat a skillet and add a little vegetable oil. With wet hands, shape small patties and place them in the skillet. Fry the cutlets for 3–4 minutes per side, until golden brown.

Keep the heat moderate so the cutlets have time to cook through inside.

Pile the finished cutlets into a small pot. While they wait to be served, they'll steam a little under the lid and stay tender. Serve them hot. You can pair these cutlets with any side dish or round them out with fresh vegetables. Enjoy!
- You can swap the button mushrooms for porcini or slippery jack mushrooms, but keep in mind the difference in prep steps and cooking time.
- Always wash eggs before using them — even a shell that looks clean can carry harmful bacteria. A food-safe wash and a brush work best.
